The future of the Hautes-Côtes
Boris Champy enthusiastically believes in the future of Hautes-Cotes, thanks to their altitude in in a global warming context. With the new generation of winegrowers, he wants to, continue to raise the reputation of this too less-known area. The objective is simple: show the subtle differences between “climats” and terroirs, with different soil types, sun exposures, slope inclinations, etc.
In altitude, we practice a viticulture respecting nature. Our single plot vineyards are large biodiversity islets, multiple « clos » with trees, edges, stone walls, stones piles, orchards… Boris knows an holistic approach is required: a global ecosystem with regenerative farming and utter respect for the environment.

Today more than ever, a great wine originates from a preserved soil. At the Domaine, we practice natural viticulture and winemaking.
We express each grape’s quintessence thanks to subtle and gentle winemaking. Our quest is to make great natural and fine wines.
The cycle then continues in the cellar with the marrying of the wine and the wood: a precise aging that subtly enhances each plot.
